Tumpang Sari Hamlet located in Mekar Sari village is one of the hamlets with natural potential, one of which is rhizome plants commonly known as empon-empon. However the community has not yet been able to process them into products with post-harvest economic value. Therefore educational activities are needed to teach the community how to process empon-empon into more economically valuable products such as herbal drinks. Training activities focused on processing products based on herbal plants such as ginger, java turmeric, and black turmeric are one of the strategies for empowering the community aimed at improving the skills, welfafer, and economic independence of the residents of Mekar Sari village. This program was motivated by the abundant potential of local natural resources, that has not been optimally utilized. The implementation methods included counseling, processing demonstrations, and hands-on practice in making processed products such as herbal drinks and instant powder. The result showed an increase in participants’ knowledge and skills in processing herbal plants into products with selling value. Additionally, the training encouraged the formatioan of joint business groups and opened up opportunities for local marketing. Thus, the training contributed positively to the economic empowerment of the village community through the sustainable use of local potential
